The Veggie Recipe: zucchini and squash

Zucchini and Squash

This is a simple recipe for tasty side dish that’s healthy and good! It’s also one of those recipes that’s best made for your tastes so my apologies to the Type A personalities.

Here’s what you need:

  • 1 zucchini
  • 1 squash (I used yellow)
  • olive oil (EVOO or the regular)
  • salt
  • pepper
  • savory
  • cajun seasoning

Directions:

  • Cut the zucchini and squash into thin slices.
  • Put olive oil in the skillet. You can use as much or as little as you like. I used just enough to lightly coat the skillet.
  • Place the veggies in the skillet and sprinkle the rest of the seasonings and spices to your liking. (My preference is go light on the salt, heavy on the pepper, and everything else to taste while I’m cooking.)
  • Serve and enjoy!

Depending upon your preferences with the veggies (some like them soft and others prefer a bit of a crunch to it) you should cover the skillet to let it cook. This will cook the veggies faster and keep the heat where it needs to go. Again, the length of the cook time will vary depending upon your tastes.

On a side note: If you are cooking for four people or less I’d use smaller veggies. The photo above was made for about 10 people using one large zucchini and squash each. So if you are feeding just a few  folks (or in my case most days two people) it’s best to choose small veggies for this recipe.
